Pea & Mint Soup

It's winter time and my favourite winter warmer is a thick & hearty soup! This pea soup is delicious and creamy but still low in fat and is always a favourite with guests :)

Serves 4


1-2 Tbsp sunflower oil

70g onion

diced 70g carrot

chopped 1 small clove fresh garlic

crushed pinch salt and freshly ground pepper

500g frozen peas

1 tsp vegetable stock powder

750ml water

20g mint, chopped

100ml greek yoghurt (fat free)

squeeze of lemon


  1. Fry the onions and carrots together in the oil until they soften. Add the garlic, peas, salt and pepper and mix for a minute.

  2. Add the stock and water and simmer for 10 minutes.

  3. Remove the pot from the heat and blend the soup with the mint, yoghurt and lemon juice

  4. Serve with a dollop of yoghurt and a sprig of mint
