Chocolate Roasted Chickpea Chunks

These chocolate chickpea chunks are one of those snacks that feel like a treat but also happen to be packed with nutrients. They’re crunchy, a little salty, a little sweet, and super easy to make. Chickpeas might sound like an odd ingredient in a chocolate recipe, but once they’re roasted and coated in dark chocolate and nut butter, they turn into something surprisingly moreish.
These are great to keep on hand for when you want something a little sweet but also filling. The combination of fibre, protein, and fat makes them satisfying without being overly rich. You can also try them with different types of nut butters or a pinch of cinnamon, chili flakes or ground pistachios if you’re feeling experimental.
Ingredients
(Makes roughly 8 chunks)
200g canned chickpeas
150g dark chocolate
60g almond butter (or any nut butter you have on hand)
1 tsp olive oil
Flaky sea salt, for sprinkling
Method
Rinse and drain the chickpeas, then pat them dry with a clean dishcloth or paper towel. If you’ve got the time and patience, removing the skins helps them crisp up better in the air fryer.
Toss the chickpeas with olive oil and place them in the air fryer at 190°C for about 15 minutes. Shake the basket every 5 minutes to make sure they cook evenly. Let them cool completely once done. Adjust the cooking time for optimal crunchiness, remembering that they harden up more as they cool.
Break the chocolate into smaller pieces and melt it in the microwave in short bursts of 30-60 seconds, stirring between each until smooth.
In a bowl, combine the cooled chickpeas, melted chocolate, and nut butter. Stir well so that all the chickpeas are coated.
Line a tray with parchment paper and spoon the mixture into small clusters. They don’t have to be perfect—just aim for small, snackable chunks.
Sprinkle a tiny bit of flaky salt on each cluster, then place the tray in the fridge for about an hour to set.
Store in the fridge in a sealed container. They will keep for roughly a week.
